Grain Free Breakfast Cookies

Time to roll out another recipe from my ‘Against All Grain‘ cookbook!  Written by the very talented Danielle Walker!  As I push forward in my {New Year Challenge!}, this time I decided to try the ‘allergy-free breakfast cookies’.  This recipe can be found on pg. 54 of the cookbook.  They were appealing to me for several reasons.  One~They are fruit sweetened only!  Enough said.  Two~I really wanted something I could prepare fast with minimal clean up for those mornings when time is lacking.  I am digging the idea of preparing the dough in advance and keeping it in the refrigerator.  Then all I have to do is scoop and bake!  However, you could totally bake these in advance and even freeze them…  Three~Who doesn’t want to eat a cookie for breakfast?!

Like all of the recipes in Danielle’s book, these are made without grains.  They are also made without eggs, dairy and nuts!  I did make one change to the recipe.  It called for palm shortening and I opted to use Kerry Gold butter instead.  So, mine had that tiny bit of dairy.  I also added my usual essential oils!  I left out the 1½ tsp. of  lemon juice & 2 tsp. of cinnamon that her recipe called for.  Instead I added 2-3 drops of {Young Living} Cinnamon Bark essential oil and 6 drops of {Young Living} Lemon essential oil.  I still can’t believe 1 drop of the cinnamon bark oil is equivalent to 1 tsp. of cinnamon!

*Young Living Lemon (Citrus limon) essential oil has a strong, purifying, citrus scent that is revitalizing and uplifting.  Lemon consists of 68 percent dlimonene, a powerful antioxidant.  Jean Valnet MD estimated that it takes 3,000 lemons to produce one kilo of oil.  In his book, The Practice of Aromatherapy, Valnet wrote that lemon is a tonic for supporting the nervous and sympathetic nervous system.

* Young Living Therapeutic Grade™ Cinnamon Bark is meticulously tested to ensure that no dilution from similar-smelling oils has occurred.  Cinnamon is thought to promote healthy cardiovascular and immune function, and acts as an antiseptic.

 As always, I must add that I ONLY use Young Living Essential Oils.  So, their oils are the only ones I recommend.  I feel it is important to mention this because I have heard it estimated that about 98% of the essential oil out there are not safe for consumption.  If you want more information on why Young Living oils ARE safe to consume this is a good place to start {Introduction to Essential Oils}.
