Over the weekend I decided forgo our usual egg {or at least egg dominated} breakfast. Sometimes you just want a big stack of pancakes! I thought this was the perfect time to try a new recipe from the ‘Against All Grain’ cookbook. You can read all about my cookbook / recipe challenge here {New Year Challenge!}. Danielle’s recipe for ‘Banana Mouse Pancakes’ can be found on page 190 of her book and also a slight variation of this recipe can be found here: {Banana Pancakes}. I didn’t vary the recipe in any way, other than adding Young Living essential oils of course! All and all, this is the best grain free pancake recipe I have tried! In addition to the bananas it only called for 2 teaspoons of honey to sweeten the batter. I have to add, the taste of banana was subtle to say the least…
When preparing the recipe I highly recommend adding a few drops of {Young Living} Cinnamon Bark essential oil to the batter. A little goes a long way! In addition to that, I also added 1 drop of {Young Living} Cinnamon Bark essential oil and about 5 drops of {Young Living} Orange essential oil to 1/2 a cup of maple syrup. The maple syrup is for the purpose of drizzling over the top of the pancakes. Sooo yummy!
* Young Living Orange {Citrus Sinensis} essential oil has a rich, fruity scent that lifts the spirit while providing a calming influence on the body. It is rich in the powerful antioxidant d-limonene and aids in maintaining normal cellular regeneration.
* Young Living Therapeutic Grade™ Cinnamon Bark is meticulously tested to ensure that no dilution from similar-smelling oils has occurred. Cinnamon is thought to promote healthy cardiovascular and immune function, and acts as an antiseptic.
* As always, I must add that I ONLY use Young Living Essential Oils. So, their oils are the only ones I recommend. I feel it is important to mention this because I have heard it estimated that about 98% of the essential oil out there are not safe for consumption.
