Thai Coconut Soup {prepared with essential oils!}

Finally! Another recipe from the famed ‘Against All Grain’ cookbook! And it is full of some of my very favorite essential oils! I decided it was time to post a savory recipe using the oils. Don’t you agree? And when I came across this soup recipe (while drooling my way through the pages of this book) I knew I had found the perfect one! It called for…

  • kaffir lime leaves
  • fresh lemongrass
  • and fresh ginger

It just so happened that I had NONE of these three things lying around my kitchen. Although, I do normally have fresh ginger… I did, however, have lime, lemongrass & ginger essential oils! Literally like a garden constantly in season waiting in my pantry. 🙂 So fun! Besides substituting the oils for these three ingredients, I also doubled the chicken stock and omitted the 1/2 T. of coconut sugar (plenty sweet with the coconut milk). The recipe found in the cookbook actually doesn’t have coconut sugar listed with the ingredients. Only the recipe on the website… I’m not sure why, but that is the only difference between the two sources.

The soup was delicious! I only have one caution to share. It was very rich! So keep that in mind before going back for your second bowl. 😉

* As always, I must add that I ONLY use Young Living Essential Oils.  So, their oils are the only ones I recommend.  I feel it is important to mention this because I have heard it estimated that about 98% of the essential oil out there are not safe for consumption.  If you want more information on why Young Living oils ARE safe to consume this is a good place to start {Introduction to Essential Oils}.
